Meat vs. Morality

This is somewhat related to previous debates, but I'm not trying to rehash those. My question is this--should a person's moral beliefs supercede their desire to be a healthy person? For example, should a vegetarian refuse to eat any animal flesh, even if it means they won't be healthy? Or should they eat some to prevent their bodily decay? And if they should, at what point do they decide to go for the meatiness? When they're afraid of being unhealthy, or would the "moral" vegetarian wait until they're near death by malnutrition? Just wanting some opinions here, as I'm wrestling with this very issue right now... Crucify me!
